Tap peyniri is a Turkish breakfast cheese formed into a rounded ball or dome, then brined. Ekici's version is a milder, softer profile than beyaz peynir, closer to a fresh mozzarella in texture. Standard on the Turkish breakfast plate, sliced or cubed. Also good in cheese and tomato sandwiches.
