A litre of pineapple juice, pressed from ripe fruit and lightly sweetened. Bright, tropical, slightly tart on the finish, and good with an ice cube and a squeeze of lime. Also earns its keep in the kitchen: half a cup marinates a kilo of chicken in an hour, the natural enzymes tenderising as they work.
