White kidney beans are large, creamy dried beans. In Turkish kitchens they become kuru fasulye, the slow-cooked bean stew eaten with rice. Soak overnight, boil hard for 10 minutes, then simmer with tomato paste, onion and a little meat or olive oil until soft.
