A tray of fifteen free-range eggs. Free range means the hens have daytime access to outdoor space, a higher welfare standard than barn or caged systems. Fifteen is a practical number for a household that cooks a big weekend breakfast and gets through eggs during the week in baking and quick meals. Use them for menemen with peppers and tomatoes, Persian kuku sabzi packed with fresh herbs, shakshuka, or a Pakistani anda bhurji with onion, tomato and green chilli. For baking, take them out of the fridge half an hour ahead so they blend smoothly into the batter. Crack each one into a cup first, so a stray piece of shell does not end up in the dish.
