A 1kg bag of chilgoza pine nuts, also spelled jalghoza or jolghoza, sold in their thin shells. These are the long, slender pine nuts of the mountain pines that grow in Afghanistan and northern Pakistan, quite different from the small, rounded pine nuts used in pesto. The kernel inside is soft, buttery and slightly resinous. In Afghan and Pakistani homes they are a winter treat, cracked by the handful with green tea, and set out with almonds and dried fruit when guests visit or at weddings. Shelled kernels can be toasted and scattered over pulao, sheer khurma or firni. Crack the shell lengthways between your front teeth or with a light press of the fingers.
