A 10kg sack of sella rice. Sella rice is parboiled in the husk before it is milled, which firms up the grain. Once cooked, the grains stay long, separate and less sticky, and they hold their shape through long cooking, reheating and the big pots of party and celebration food. Many Pakistani and Afghan cooks choose sella for biryani, pulao and qabuli palaw, and it works well for Gulf-style kabsa, mandi and machboos, where the rice simmers in meat stock. The 10kg size suits a household that cooks rice daily, or one catering for Eid, weddings and family gatherings. Sella needs a longer soak and a little more water than ordinary white rice.
