Safa Pomegranate Molasses Sauce

A 100g pack of pomegranate molasses sauce, known in Arabic as dibs rumman and in Turkish as nar ekşisi. Pomegranate molasses is traditionally made by boiling pomegranate juice down to a thick, dark syrup. It tastes sharp and sour first, with a fruity sweetness behind, and a few drops brighten food the way lemon or vinegar would, with more depth. Whisk it with olive oil, lemon and sumac to dress fattoush, stir it into Turkish kısır or Syrian muhammara with walnuts and red pepper, or use it in Persian fesenjan, where it balances ground walnuts in a slow chicken stew.
