Ripe yellow plantains, the cooking banana of West African, Caribbean and Latin American kitchens, sold per kg. Plantains are cooked, not eaten raw. Slice and fry them as dodo or maduros, roast them, or add them to stews. As the skin darkens with black patches the flesh grows sweeter, which is the stage most cooks want for frying.
