A garlic-forward beef sucuk of the sort Turkish and Kurdish households have been slicing into their breakfast pans for generations. The sausage is dry-cured, deeply seasoned with garlic, cumin and pul biber, and firm enough to slice thin. Fry the coins for two minutes each side until the edges curl and the fat renders; serve with eggs, olives, a good white cheese and hot tea. halal-certified from a British halal supply chain. Slice it a finger thick and fry in a dry pan; it releases its own fat, and eggs cracked into that fat are the classic sucuklu yumurta. It also goes on pide, in toasties and in a bean stew. Keep refrigerated. Once cut, wrap the end and use within two weeks; it can also be frozen in slices.
