A garlic-forward beef sucuk of the sort Turkish and Kurdish households have been slicing into their breakfast pans for generations. The sausage is dry-cured, deeply seasoned with garlic, cumin and pul biber, and firm enough to slice thin. Fry the coins for two minutes each side until the edges curl and the fat renders; serve with eggs, olives, a good white cheese and hot tea. HMC certified from a British halal supply chain.
