Dara Sheep Ghee

A 900g pack of sheep ghee. Ghee is butter cooked slowly until the water evaporates and the milk solids are strained away, and when it is made from sheep's milk butter it has a fuller, more savoury and slightly gamey flavour than cow's ghee. It has a high smoke point, so it suits frying as well as finishing. Across Iran, Iraq, Kurdistan and the Gulf it is stirred into rice for Iraqi timman or Gulf kabsa, used to fry onions at the start of a stew, brushed over the crust of a Persian tahdig, or melted into a dish of bulgur. A spoonful is enough to flavour a whole pot of rice. Contains milk.
