Duru Long Grain Rice

A 1kg bag of Turkish long grain rice, harvested from the Tosya region and prized for its clean flavour and reliable behaviour under butter and stock. Rinse three times, soak twenty minutes, cook until the grain doubles. Serve under kebab, alongside a chicken stew, or fold with fried vermicelli for a Levantine table.
