A halloumi-style firm cheese that holds its shape under high heat: pan-fried or grilled, it browns without melting into a puddle. Kolios is one of the well-known Greek producers of the format. Slice, pan-fry or grill for 2 minutes a side, and serve with lemon and warm bread. Standard in Cypriot cooking, and increasingly on Turkish and Middle Eastern tables too. 250g pack, single-family meal size.
