Lamb shoulder is the cut that rewards patience. Well-marbled with connective tissue that breaks down into gelatin under long, slow heat, so the meat pulls off with a spoon and the sauce comes out silky. Classic dishes: North African tagine, Moroccan mechoui, Persian ghormeh sabzi, Turkish kuzu tandır, British Sunday slow-roast. Also excellent for barbacoa-style tacos or Greek kleftiko. Hand-slaughtered under HMC oversight, delivered whole or half depending on size.
