1kg, boneless and cuts from chicken leg

A 1kg pack of boneless chicken leg meat, cut into pieces and marinated in tikka spices. Leg meat holds its juice far better than breast under fierce heat, so the pieces char at the edges and stay soft inside. The marinating is done for you; all that is left is the oven, the grill or the air fryer. Thread it onto skewers for chicken tikka with naan, mint chutney and sliced onion, finish it in a tomato and cream sauce for tikka masala, or fold it into a wrap with salad and yoghurt sauce. It also works in a tray bake with peppers and potatoes. Spread the pieces out in a single layer so they colour rather than steam.
