A single 340g rump steak, prepared to hand-slaughter standards and cut to order on the morning of delivery. Rump comes from the hindquarter and has a firmer texture than ribeye or fillet, with a strong beef flavour that stands up well to marinades and spice. It is an everyday steak rather than a special-occasion one. Cook it whole and slice it thinly over rice with grilled tomatoes and peppers, cut it into strips for a beef shawarma wrap or a stir-fry, or cube it for Turkish et şiş skewers. A few hours in olive oil, onion juice and black pepper softens the grain before grilling. Always slice rump across the grain, and thinly, so each bite stays tender.
