Öncü Pomegranate Molasses Sauce

Pomegranate molasses — nar ekşisi, thick, dark and sharply sour. Into salad dressings, over grilled meat, and through muhammara. A little cuts through fat better than lemon. Pomegranate molasses is the sour-sweet backbone of a good salad dressing, a marinade for chicken or lamb, and a spoonful stirred into lentil soup at the end. Mix it with olive oil and lemon over tomatoes, parsley and onion for the classic Turkish shepherd's salad. Store in a cupboard; refrigerate after opening and it keeps for a year or more.
