Oxtail is prized for what it does in a long, slow pot. Bone-in, gelatin-rich, and packed with flavour that only comes out over hours. Cut into segments so it fits a family stew pot straight away. The cut for Caribbean-style oxtail stew, Persian abgoosht, Korean seolleongtang, or a proper English oxtail soup. Also the traditional base for a beef stock with real body.
