Jameed is yoghurt that has been strained, salted, shaped into hard balls and dried, a Bedouin way of keeping milk through the year. Karaki refers to Karak in southern Jordan, whose jameed is known across the country. This pack holds two pieces; dissolved back into liquid, they give the sharp, salty, creamy sauce that defines Jordanian mansaf. For mansaf, cook lamb on the bone in the jameed sauce, then serve it over rice laid on thin shrak bread, scattered with fried almonds and pine nuts, with extra sauce poured over at the table. Jameed also goes into rashouf, a Jordanian soup of lentils and bulgur. Because it is made from yoghurt, it contains milk; check the pack for the full allergen list.
