Sofra Bulgarian sheep white cheese is the sharp end of the beyaz peynir shelf. Sheep milk gives it a stronger, more mineral flavour than cow versions, and the brine cure keeps the crumb firm. Eats like a proper feta: cubed onto a breakfast plate with olives, sliced onto salads, or crumbled over roasted vegetables. Also traditional in Balkan börek and Turkish spinach dishes. 200g pack is the practical single-family size.
