Künefe cheese, also called dil peyniri, is the unsalted stretchy Turkish cheese used inside künefe (the shredded pastry dessert). Mild, milky, and it melts into long strings under heat. Also used in some Turkish desserts and pastries where you want the cheese to stretch. If you are making künefe at home this is the correct cheese.
