They are sliced like bacon and cook the same way, turning crisp at the edges in a dry pan, so they bring the salty, smoky element of a cooked breakfast or a sandwich to a pork-free kitchen. Use them for a full breakfast with eggs, beans, mushrooms and toast, in a club sandwich or a roll with lettuce and tomato, or chopped and fried crisp to scatter over a salad, a jacket potato or a creamy pasta.
