Halal Chicken Breast

500g. Fresh chicken breast, boneless and skinless. The everyday cut.

Boneless, skinless chicken breast is the lean, quick-cooking cut that a lot of weeknight dinners start from. This 500g pack is cut to order on the morning of delivery, so it arrives firm and fresh rather than after days in a chiller. Breast has very little fat, which makes it clean-tasting and easy to slice, but it also means it dries out if cooked past done. Cube it for tavuk şiş or a chicken karahi, slice it thin for shawarma wraps with garlic sauce, or butterfly it for the grill. It also suits a chicken biryani when you want lean meat through the rice. A yoghurt marinade with lemon, garlic and a little paprika for at least 30 minutes keeps it tender; flatten the thick end slightly so the whole piece cooks evenly.
