Halal Chicken Drumsticks

Chicken drumsticks. The family cut for the oven and the grill.

A 1kg pack of chicken drumsticks, bone-in and skin-on, cut to order on the morning of delivery. Drumsticks are easy to cook and easy to eat: the dark meat stays moist, the skin crisps in a hot oven, and the bone gives children something to hold. They take a marinade well and forgive a few extra minutes in the oven. Coat them in yoghurt, red chilli and lemon for tandoori drumsticks, simmer them in a West African-style peanut and tomato stew, or cook them in a chicken curry on the bone with potatoes. They also go well in a Somali-style pot of spiced rice with chicken. Slash each one two or three times to the bone before marinating, so the flavour gets in and the thickest part cooks through.
