Halal Chicken Legs

1kg. Halal chicken legs. Roast, braise or BBQ.

Whole chicken legs, with the thigh and drumstick still joined, bone-in and skin-on, in a 1kg pack cut to order on the morning of delivery. Leg meat has more fat and flavour than breast and stays moist through long roasting or braising, so it is hard to overcook, and the skin turns crisp and golden in a hot oven. Steam them over spiced rice for chicken mandi or kabsa, roast them in a Turkish fırın tavuk tray with potatoes, peppers and tomatoes, or rub them with a red chilli and yoghurt paste for a Pakistani-style leg piece roast. Score each leg to the bone two or three times before marinating so the flavour gets in and the thickest part cooks through. Split them at the joint if you want even pieces for a curry.
