Halal Chicken Thighs

Chicken thighs in a 500g pack, cut to order on the morning of delivery. Thigh meat is darker and richer than breast, with a little more fat running through it, so it stays juicy through high-heat grilling, long braising and reheating the next day. It is the cut many cooks reach for when they want flavour and a little room for error. Use thighs for a Pakistani chicken handi or karahi, Persian joojeh kabab, a Moroccan chicken tagine with olives and preserved lemon, or a slow chicken qorma. They also keep tavuk şiş moist on the barbecue. For joojeh, marinate them overnight in yoghurt, saffron water, lemon and grated onion; for karahi, cook them hard in tomato, ginger and green chilli until the oil separates.
