Four thin lavash flatbreads. Lavash is the soft, thin bread of Iran, Armenia, Turkey and the Caucasus, traditionally slapped onto the wall of a clay oven and baked in moments. It is flexible enough to roll without cracking, which is why it is the bread of choice for wrapping kebabs, and it dries into crisp sheets if left in the open air. Use it to wrap adana or chicken şiş with onions, parsley and sumac, lay it under grilled kebabs so it soaks up the juices, or tear it to scoop up hummus and mast-o-khiar.
