Halal Lamb Chops

Halal lamb chops, prepared to hand-slaughter standards. Grill or pan-sear.

A 1kg pack of bone-in lamb chops, each with a strip of fat along the edge that crisps and bastes the meat as it cooks. Chops are a quick cut: a few minutes over high heat leaves them pink and juicy, while long cooking only tightens them. They are prepared to hand-slaughter standards, and our butcher cuts them to order on the morning of delivery. Turkish kuzu pirzola, Lebanese grilled chops rubbed with seven spices and Pakistani masala chops all start with a cut like this. For a Persian-style grill, marinate them in grated onion juice, olive oil, salt and a pinch of bloomed saffron; for something simpler, rub with garlic, lemon and dried mint. A kilo makes a family meal with rice and salad, cooked in batches on a griddle pan.
