Lamb mince is the base of half the Turkish, Arab and Persian home kitchen. Ground fresh from lamb shoulder trim, a proper meat-to-fat ratio so keftedes stay tender and koftas hold on the skewer. Standard uses: köfte, kibbeh, keema, kofta kebab, moussaka, stuffed vegetables (dolma), lamb burgers. Hand-slaughtered under HMC oversight, ground fresh the day of delivery. Freeze in portions if you cannot use it within 24 hours.

Storage: Keep refrigerated below 4°C. Use within 24 hours of delivery or freeze on arrival in 500g portions and use within 3 months.
Preparation: Cook to at least 71°C throughout. Brown hard in a hot pan first, drain excess fat, then build the dish. For köfte or kofta, mix with grated onion, salt and spice, chill for 30 minutes, then grill 3 minutes a side.
