Halal Lamb Shank

Lamb shanks are the lower part of the leg, a hard-working muscle wrapped around a single bone. Raw they are tough, but braised slowly the collagen melts and the meat turns soft and glossy, coming away with a spoon. This 1kg pack is prepared to hand-slaughter standards and cut to order on the morning of delivery. Shanks are the meat in Persian baghali polo ba mahicheh, Turkish kuzu incik and Moroccan tagine with prunes and almonds, and they suit an Afghan qabuli palaw where the meat cooks beneath the rice. Brown them well first and choose a pot that holds them snugly in one layer, so they stay covered by the liquid and braise evenly.
