A 1.5kg lamb shoulder on the bone, prepared to hand-slaughter standards. Shoulder carries more fat and connective tissue than leg, and over several hours of gentle heat that tissue melts, so the meat comes away from the bone in soft pieces and the juices turn rich. It forgives a long cook in a way that leaner cuts do not. This is the cut for kuzu tandır, Yemeni-style mandi, Moroccan mechoui and a slow Sunday roast, and the meat can be taken off the bone for ghormeh sabzi or an Afghan qabuli palaw. For kuzu tandır at home, rub it with salt, black pepper and a little tomato paste, wrap it tightly and leave it in a low oven while you get on with the day. Keep the pan juices for cooking the rice.
