Yörem Çemen

A jar of Yörem çemen paste, the fenugreek-based spice coating that gives sucuk and pastırma their red-brown crust. Home cooks use it to marinate strips of beef into pastırma, to spice a lamb shoulder rub, or to warm up a bean stew. Deeply savoury, faintly bitter, with garlic and paprika right at the front. Store chilled once opened, spoon out with a clean utensil, and use within a few weeks. Contains fenugreek and garlic.
