Zaad Artichoke

400g

A 400g pack of frozen artichoke, cleaned and trimmed so it goes straight into the pot. Preparing fresh globe artichokes means stripping leaves, scooping out the choke and dropping each one into lemon water before it browns; this skips all of that. Once cooked the texture is tender, with a mild, slightly nutty flavour. Cook it the Turkish way as zeytinyağlı enginar, braised in olive oil with carrots, peas, dill and lemon and served cold, or add it to a lamb and artichoke stew or a rice pilaf with broad beans. Larger pieces can be filled with spiced minced meat and baked in tomato sauce, as Syrian and Lebanese cooks do. Check the pack for full ingredients and allergens.
