Anjoman Lighvan Cheese

Anjoman Lighvan cheese, 400g. Persian-Turkish style brined white cheese.

Lighvan is a famous Iranian dairy region on the Turkish border, known for a sharp brined white cheese aged in traditional skins. Anjoman's version is a cow milk block, salty and firm, closer to a proper Balkan feta than a mild Turkish beyaz peynir. On the breakfast plate cubed with fresh herbs, olives and bread, or the classic Persian nan-o-panir-o-sabzi combination. Also good crumbled onto a warm bulgur or rice dish at the end.
