Brisket is the beef cut for slow cooking. A dense, well-marbled piece from the chest that needs low heat and time, and pays back with pull-apart texture and deep beefy flavour. Ours is hand-slaughtered under HMC oversight and cut to order the day it goes out. Six hours in the oven at 140°C, wrapped, and you have the base of a family meal for a week. Also the classic cut for pastırma, corned beef, and slow smoker recipes. Sold by the kilogram, cut and packed fresh for your Friday or Saturday delivery.
