Halal Beef Brisket

500g

A 500g piece of beef brisket, prepared to hand-slaughter standards and cut to order on the morning of delivery. Brisket comes from the lower chest, a dense, hard-working muscle layered with fat and connective tissue. It is not a cut to rush: cooked slowly in liquid it softens, and sliced across the grain it holds together in tender pieces. Braise it with onions, carrots and stock for a pot roast, simmer it in a Persian khoresh with split peas and dried lime, or cook it slowly with spices and dried fruit for a Moroccan tagine. Leftovers shred well into wraps and sandwiches. Like most braises, brisket tastes even better the next day: chill it in its liquid, slice it cold, and reheat gently in the sauce.
