Ground fresh from beef trim, ours is a medium-fat mix with enough marbling to keep a burger juicy and enough lean to hold a bolognese together without going greasy. Standard on the shopping list for kebabs, meatballs (köfte), keema, bolognese, shepherd's pie, meatloaf, and stuffed vegetables. Hand-slaughtered under HMC oversight, sold by the kilogram, cut and ground the day it goes out. Use it the day of delivery or freeze in portions.
