Beef mince for everyday family cooking, in a 500g pack. It has enough fat to keep köfte and burgers moist and enough lean that a sauce does not end up swimming in grease. Prepared to hand-slaughter standards, and cut and minced to order on the morning of delivery, so it is at its freshest the day it arrives. It is the base for keema matar, kıymalı pide, karnıyarık, stuffed peppers and courgettes, spaghetti bolognese and cottage pie. For keema, brown it hard with onion, ginger and garlic before the tomatoes go in, then finish with peas and garam masala. If you only need half the pack this week, flatten the rest in a freezer bag on the day it arrives so it freezes and thaws quickly.
