Beef neck is one of the great slow-cook cuts. Full of collagen and marbled fat, it breaks down over hours into a silky, spoon-tender stew with proper depth. Bone-in for extra flavour in the pot. The cut for hearty winter dishes: Turkish tas kebabı, Persian gheimeh, North African tagine, or a British-style braise with root vegetables. Also excellent for making broth. Hand-slaughtered under HMC oversight, cut to order and delivered fresh across Bristol.
