Halal Beef Ribs

500g

A 500g pack of beef ribs on the bone, prepared to hand-slaughter standards and cut to order on the morning of delivery. Ribs carry generous marbling and a lot of connective tissue between the meat and the bone. Rushed, they are chewy; cooked low and slow, the fat renders out, the collagen melts and the meat comes cleanly off the bone. Braise them for Korean galbi jjim, simmer them with chickpeas and potatoes for a Persian abgoosht, or rub them with spices, cook them slowly wrapped in the oven and finish them over charcoal. A slow oven braise with onions and tomatoes, served over rice, is a simple family version. Season them the day before if you can; the salt has time to work into the meat.
