Beef ribs are the celebration cut. Deep marbling, plenty of connective tissue, and one of the best flavour returns per kilogram if you give them the time they ask for. Bone-in with the fat cap intact. The cut for slow-smoked BBQ, korean galbi, oven-braised short ribs, or a Persian abgoosht. Also a favourite for weekend family barbecue in the summer. Hand-slaughtered under HMC oversight, cut fresh the day it leaves us. Sold by the kilogram.
