Sucuk is the dry, spiced, fermented sausage of Turkish cooking, and this 250g pack from EfePaşa comes ready sliced, so it goes straight from the pack into the pan. This one is seasoned with garlic, which comes forward once the slices hit the heat. Sucuk releases its own fat as it fries, and that red, spiced oil is half the point. The classic way is sucuklu yumurta: fry the slices in a small pan until the edges curl, crack eggs straight into the oil, cook until set and eat from the pan with bread.
