Halal Lamb Back Chops

A 1kg pack of lamb back chops, cut from along the back of the lamb, each with a strip of fat on one edge. They are tender, quick-cooking chops: a few minutes a side over high heat leaves them pink in the middle, while overcooking makes them tighten and curl. Prepared to hand-slaughter standards, they are cut to order on the morning of delivery. Marinate them in yoghurt, ginger, garlic and garam masala for Pakistani tawa chops finished with chaat masala and lemon, or grill them over charcoal for Iranian shishlik with saffron and onion. Moroccan cooks serve grilled chops with a dish of cumin and salt for dipping. Nick the fat every couple of centimetres before cooking so the chops stay flat in the pan.
