Halal Mixed Lamb on the Bone

500g

A 500g mix of lamb pieces on the bone, cut for the pot rather than the grill. Bone, marrow and the connective tissue around the joints give a stew or broth body and a rounded flavour that boneless meat does not. The lamb is prepared to hand-slaughter standards, and the pieces are cut to order on the morning of delivery. This is what goes into a Pakistani lamb shorba or a karahi on the bone, Iraqi tashreeb with the broth poured over torn bread, and Turkish kuzu haşlama, the plain boiled lamb with vegetables that is served as soup first and meat second. Brown the pieces, then simmer gently with onion, tomato and spices until the meat loosens from the bone. Skim the surface in the first half hour for a clear broth.
