Merguez is the thin, spiced sausage of North African cooking, eaten across Morocco, Algeria and Tunisia and sold from grills in every French-North African neighbourhood. This 500g pack is made for direct heat: the casing tightens and blisters, the spices toast, and the fat runs out to flavour whatever sits underneath. Grill them for a merguez baguette with harissa and fried onions, lay them over couscous with chickpeas and seven vegetables, or slice and fry them with peppers, tomatoes and eggs for a Tunisian-style chakchouka. In Algerian and Tunisian homes they are a fixture of the summer barbecue. Leave the casings unpricked so the juices stay inside.
