Halal Lamb Tail Fat

A 250g pack of lamb tail fat, known in Turkish as kuyruk yağı and in Persian as dombeh. Tail fat is softer than other lamb fat and renders down into a clean, savoury cooking fat with a distinct lamb flavour. A little goes a long way, and it changes the taste of a dish in a way oil or butter does not. Render a few cubes in a dry pan and fry the onions for kavurma or a pilaf in it, thread small pieces between the meat on the skewer for Persian kabab or Afghan chopan kebab so the lamb bastes as it grills, or chop it finely into lean minced lamb for adana. Freeze it in small portions so you can take out just what each dish needs.
