Halal Diced Lamb (Boneless)

Boneless lamb cut into cubes, 500g, prepared to hand-slaughter standards and diced to order on the morning of delivery. With no bone to work around, it cooks evenly and is easy to portion, so it suits a quick skewer as well as a slow-cooked curry. Lamb fat melts into the sauce as it cooks and gives it a fuller, sweeter taste than beef. Thread it with onion and pepper for kuzu şiş or Persian kabab chenjeh, braise it for a lamb rogan josh, Pakistani gosht korma or Afghan qorma, or cook it slowly with apricots in a Moroccan tagine. For skewers, marinate overnight in yoghurt, grated onion and a little oil; for a curry, brown the cubes before the masala goes in so they hold their shape.
