Halal Mixed Beef on the Bone

A 500g mix of beef pieces on the bone, prepared to hand-slaughter standards and cut to order on the morning of delivery. These are stewing pieces, not grilling ones: the bones and the connective tissue around them release gelatine into the pot over a long simmer, which gives a broth body and a full, savoury taste. Use it for a Pakistani aloo gosht, a Bangladeshi beef bhuna, or a Somali beef maraq with potatoes, carrots and cumin, served with rice or anjero. It also makes a good base stock for soups and rice. Start the pieces in cold water if you want a clear broth, and skim the grey foam that rises as it comes to the boil.
