Storage: Keep refrigerated below 4°C. Use within 3 days of delivery or freeze on arrival and use within 3 months.
Preparation: Brown the pieces hard in a heavy pot, then cover with stock or water and aromatics. Simmer very low for 3 to 4 hours until the meat pulls away from the bone. Chill overnight to lift the fat off the top, then reheat and serve.
