A 400g ribeye steak, prepared to hand-slaughter standards and cut to order on the morning of delivery. Ribeye comes from the rib section and has fat marbled right through the muscle, with a seam of fat near the centre that melts as the steak cooks. That marbling keeps it juicy from rare through to medium and gives it a rich, buttery beef flavour. Serve it with chips and a green salad, or slice it over buttered rice with grilled tomatoes and long green peppers, the way it often comes at Turkish and Arab grill houses. Thin slices also make a steak wrap with tahini sauce and pickles. Take the steak out of the fridge half an hour before cooking, pat it dry and salt it well; a dry surface browns, a wet one steams.
