Halal Sirloin Steak

340g, Halal sirloin steak, Ready for the pan.

A 340g sirloin steak, prepared to hand-slaughter standards and cut to order on the morning of delivery. Sirloin sits between rump and ribeye: more tender than rump, leaner than ribeye, with a band of fat along one edge that renders down in the pan and flavours the meat. It is one generous steak for one person, or sliced to share between two. Serve it with peppercorn sauce and chips, or slice it over rice with a knob of butter and grilled peppers. Cut into thin strips, it takes a Persian kabab barg-style marinade of onion juice, saffron and oil before a short spell on a hot grill. Use tongs to stand the steak on its fat edge for the first minute; the fat renders and gives you oil to cook the rest in.
