Sirloin sits between rump and ribeye: leaner than ribeye, more tender than rump, with a thin fat cap along one edge that renders down and flavours the meat. This is a 340g single-portion cut, a proper dinner-plate steak. Prepared to hand-slaughter standards, cut and vac-packed the day it goes out. Straight to the pan on a weeknight, or dressed up with peppercorn or chimichurri for a weekend. Also the classic cut for a British sirloin roast if you buy several at once.
