Halal Top Side Beef Fillets

Topside is a lean cut from the inside of the hind leg, with very little marbling and a fine, even grain. This 500g pack is cut into fillets, prepared to hand-slaughter standards and cut to order on the morning of delivery. Because there is so little fat, topside does well either cooked fast and kept pink, or cooked long in liquid; anything in between toughens it. Beat the fillets thin for a beef schnitzel with lemon, roll them around a stuffing of herbs and onion for beef olives, or cut them into strips for a beef shawarma marinade, a stir-fry or Somali beef suqaar. For quick cooking, marinate for a few hours in oil, grated onion and lemon, then sear in a very hot pan and slice across the grain.
