Kataifi is pastry dough spun into very fine strands, the pastry behind Levantine knafeh, Turkish künefe and the nut-filled rolls and nests that appear at Eid and weddings. This 400g pack is frozen, which keeps the strands supple. Once thawed, buttered and baked, they turn crisp and golden and soak up syrup while keeping their crunch. For a Palestinian-style knafeh, rub the strands with melted ghee, press half into a buttered tray, add a layer of soaked and drained akkawi or nabulsi cheese, cover with the rest and bake until golden. Pour over cool sugar syrup scented with orange blossom and finish with ground pistachio. Check the pack for full ingredients and allergens.
