Diced beef is the everyday cut for slow-cooked family meals. Cubed from the leaner chuck and shoulder trim, seasoned and browned it makes the base of stews, curries and skewers across Turkish, Arab, Persian and South Asian kitchens. Standard uses: kavurma, karahi, tas kebabı, chunky beef curry, Persian khoresh, Moroccan tagine, beef bourguignon. Also fine for beef and vegetable skewers on the BBQ, threaded with peppers and onion. Hand-slaughtered under HMC oversight, cut fresh, sold by the kilogram.
