Cubed from the leaner chuck and shoulder trim, seasoned and browned it makes the base of stews, curries and skewers across Turkish, Arab, Persian and South Asian kitchens. Standard uses: kavurma, karahi, tas kebabı, chunky beef curry, Persian khoresh, Moroccan tagine, beef bourguignon. Also fine for beef and vegetable skewers on the BBQ, threaded with peppers and onion. Prepared to hand-slaughter standards, cut fresh, sold by the kilogram.

Storage: Keep refrigerated below 4°C. Use within 3 days of delivery or freeze on arrival in 500g portions and use within 3 months.
Preparation: Season and brown the cubes hard in a hot pan before adding liquid, that colour is the base of the sauce. Braise at 140°C for 90 minutes to 2 hours until fork-tender. Skewers cook fast: 3 to 4 minutes a side on a hot grill.
